Seed oils are in just about everything. But they don't have to be. Zero Acre makes an all purpose cooking oil through the natural process of fermentation. Microbes eat plant sugars and turn them into fat, then the microbes get pressed like little olives. The result is an oil with more monounsatured fats (the good kind) than olive oil and a tiny environmental footprint when compared to conventional monocrop agriculture. The brand received an investment from Cultivate Next, Chipotle’s venture fund and has seen particular momentum in food service, including Shake Shack.
